We don't add a ton of spices to the gravy since we're counting on the sausage for flavor. For the gravy, we keep it simple with just a touch of onion and a pinch of garlic powder – I'm all about keeping that garlic taste subtle. Now, let's talk pepper. It's totally up to you! However, if you're opting for ground turkey sausage or chicken, you might want to amp up the flavor by adding some chicken stock or using a combination of half milk and half chicken stock. Of course, all milk works just fine too. Just remember, using chicken stock can add a different dimension to the gravy's texture and taste, so adjust according to your preference for thickness and flavor intensity. 2/3 cup flour
1 lb ground breakfast sausage
3 TBs butter or sausage grease
3 cups milk at room temperature
3 TBS minced onions
pinch of garlic powder
1/2 tsp salt or to taste
1/2 tsp black pepper or to taste

Directions
Step 1: In a cold pan crumble and brown breakfast sausage.
Step 2 : Toward the end of the browning add minced onion and cook until soft.
Step 3 : Add flour, salt and pepper and garlic powder to pan with browned sausage. Mix well, stir until flour is well coated with grease from sausage. If not enough sausage grease add butter.
Step 4 :Turn off heat and cool. Stir occassionally. Let sit for a few minutes.(takes away the flour taste)
Step 5 : Reheat on medium heat and add a Tablespoon of butter if no grease left in pan.
Step 6 : Add room temperature milk slowly while stirring until mixture is fully blending. Turn down to low for 5-10 minutes. Add more milk if needed until your desired consistency is reached.
Step 7 : Top biscuit with hot gravy.
