Ingredients
3medium sweet potatoesabout 2 cups mashed
1/2stick butter
2large eggs
1/2cuppacked brown sugar
3/4cupgranulated sugar
1tbsppumpkin pie spice
1tspcinnamon
1/4tspnutmeg
1tspvanilla extract
Optional: 1 tsp lemon juice
2tbspevaporated milk or half & halfmore for a softer texture
Instructions
Roast or boil sweet potatoes until very soft. Cool slightly, peel, and mash.
Mix in butter, then add sugars and spices. Taste and adjust seasoning.
Beat in eggs, then stir in milk until desired texture is reached.
Pour into a greased pan (with or without crust). 8x8, 9x9
Bake at 350°F for 50–60 minutes, or until firm.
Notes
For the best flavor and texture, roast the sweet potatoes to concentrate their flavor and reduce excess moisture. If you prefer to boil them, be sure to let them sit and drain well afterward.
