Homemade Salisbury Steak with Brown Onion & Green Pepper Gravy
Tender homemade Salisbury steak patties simmered in a rich brown onion gravy. Made from scratch with simple ingredients and perfect served over creamy mashed potatoes.

Ingredients
Salisbury Steak Patties
1½lbsground beef
3tablespoonfinely minced onion
1large clove garlicminced
1large egg
8-10saltine crackers or bread crumbsfinely crushed
1teaspoontable salt
1teaspoonfreshly ground black pepper
Brown Onion & Green Pepper Gravy
2large onionsthinly sliced
1large green bell pepperthinly sliced
1large clove garlicminced
4tablespoonsbeef drippings or butter
4tablespoonsall-purpose flour
3-3½cupbeef broth
½tablespoonWorcestershire sauce
1teaspoonblack pepperor to taste

Instructions
Make the Salisbury Steak Patties
In a large bowl, combine crushed saltines, egg, minced onion, garlic, salt, and black pepper. Let sit for about 1 minute to soften the crackers.
Add ground beef and gently mix just until combined. Do not overmix.
Divide into 6 portions and gently shape into oval patties about ½–¾ inch thick. For larger portions, make 4 patties.
Sear the Patties
Heat a 12-inch cast iron skillet over medium-high heat.
Sear patties for 3–4 minutes per side, until nicely browned but not cooked through.
Remove patties and set aside, leaving the browned bits and drippings in the skillet.
Make the Brown Onion Gravy
Reduce heat to medium and add beef drippings or butter if needed.
Add onions and cook until softened and beginning to brown.
Add green pepper and cook until slightly tender. Add garlic and cook for 30 seconds.
Sprinkle flour over the vegetables and stir. Cook for 2–3 minutes.
Slowly add beef broth, stirring and scraping the bottom of the skillet to loosen the browned bits.
Stir in Worcestershire sauce and black pepper. Taste and adjust salt as needed.
Finish the Salisbury Steak
Return the patties to the skillet, nestling them into the gravy.
Cover and simmer gently over low heat for 20–25 minutes, flipping the patties halfway through, until tender and cooked through.
Serve hot over mashed potatoes with plenty of onion and green pepper gravy.
Notes
The gravy is the star. Give the onions time to develop flavor, and don't forget to scrape up those browned bits from the skillet.
Keep the onion in the patties minimal. The sliced onions in the gravy bring plenty of onion flavor.
Gravy too thick? Add a splash of beef broth while it simmers to loosen it back up.
Serve it over creamy mashed potatoes. That's the best way to catch every bit of that brown gravy.
