Honey Butter Carrots
These honey butter carrots are a sweet, savory side dish with a hint of spice and citrus. Roasted or stovetop, they’re a perfect addition to any meal!

baby carrots
or sliced regular carrots

unsalted butter

tbsp
honey
1
tbsp
brown sugar
1/2
tsp
cinnamon
1/4
tsp
nutmeg
Zest of 1 orange

apple cider vinegar or lemon juice
1/4
cup
broth or water

Instructions
Preheat oven to 400°F.
Toss the carrots with a little olive oil, salt, and pepper.
Spread them out on a baking sheet and roast for 20–25 minutes, or until tender with crispy edges.
In a skillet, melt butter over medium heat. Stir in honey, brown sugar, cinnamon, and nutmeg. Let it bubble gently for 1–2 minutes.
Stir in orange zest.
Add the roasted carrots to the skillet, tossing them in the honey butter mixture. Cook for 2–3 minutes.
Stir in apple cider vinegar or lemon juice. Taste and adjust with salt and pepper.
Return to oven for 5 minutes. Garnish with fresh parsley if desired.
Stovetop Instructions:
Add carrots + broth to a skillet, cover, and simmer for 8–10 minutes until fork-tender.
Uncover and let liquid evaporate.
Stir in butter, honey, brown sugar, cinnamon, nutmeg, and orange zest. Cook for 3–5 minutes.
Stir in vinegar/lemon juice, season with salt and pepper, and serve warm.
