I know that glazed carrots have been around for quite some time, but in my home, it was either raw, roasted, or straight from a can. Honey Butter Glazed Carrots were definitely not part of our everyday recipes. The wonderful thing about this recipe is that it’s versatile, perfect for special meals yet quick enough to spice up our everyday side dishes. The video showcases an oven-roasted preparation, but the recipe, as written, can easily be adapted for the stovetop by adding just one extra ingredient: broth or water. Whether you choose the oven or stovetop, these carrots will bring a touch of sweetness and richness to any meal.
What Kind of Carrots to Use?
Concerned about what kind of carrots to use? I say, any and all the above! In my video, I’m using rainbow carrots because they were on sale and just so beautiful, but you can choose whatever type of carrot you prefer. Not to mention, you can use any cut you like. I love the beauty and rustic feel of a whole glazed carrot, uncut and packed with full carrot flavor. Of course, we can’t forget about baby carrots, miniature and bite-sized! When you use a larger carrot or larger pieces, you’ll get a wonderful, deep carrot flavor that pairs perfectly with the honey butter glaze. You can also cut them smaller, like I did in my video (I was trying to be fancy, lol). Cutting them smaller will yield a sweeter result with less of that bold carrot flavor. The size you cut them is really up to your preference. You can cut them into coins, strips, or whatever shape you’re in the mood for. Have fun and experiment!

Spice It Up with Your Favorite Flavors
I love my combo of spices, and the best part is you can adjust it to fit your palate. Cinnamon and nutmeg create a warm, homey feeling that’s hard to beat, but why stop there? You can experiment with a few other spices to make it uniquely yours.
- • Cardamom: Since I’m a big fan of cardamom, I recommend adding a little of this unique spice to your mix, or even a touch of allspice for an extra depth of flavor.
- • Allspice (optional): If you don't have cardamom, adding a dash of allspice works just as well to give the dish that warm, comforting flavor.
- • Orange zest: If you don’t have an orange on hand for the peel, no worries—just use orange juice instead. Or, for a bit more citrusy flair, mix orange juice with lemon juice to create a delightful citrus vibe.

Honey Butter Carrots
Ingredients
- 1 lb baby carrots or sliced regular carrots
- 3 tbsp unsalted butter
- 2 tbsp honey
- 1 tbsp brown sugar
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- Zest of 1 orange
- 1 tsp apple cider vinegar or lemon juice
- 1/4 cup broth or water Stovetop Only
- Salt & pepper to taste
Instructions
- Preheat oven to 400°F.
- Toss the carrots with a little olive oil, salt, and pepper.
- Spread them out on a baking sheet and roast for 20–25 minutes, or until tender with crispy edges.
- In a skillet, melt butter over medium heat. Stir in honey, brown sugar, cinnamon, and nutmeg. Let it bubble gently for 1–2 minutes.
- Stir in orange zest.
- Add the roasted carrots to the skillet, tossing them in the honey butter mixture. Cook for 2–3 minutes.
- Stir in apple cider vinegar or lemon juice. Taste and adjust with salt and pepper.
- Return to oven for 5 minutes. Garnish with fresh parsley if desired.
Stovetop Instructions:
- Add carrots + broth to a skillet, cover, and simmer for 8–10 minutes until fork-tender.
- Uncover and let liquid evaporate.
- Stir in butter, honey, brown sugar, cinnamon, nutmeg, and orange zest. Cook for 3–5 minutes.
- Stir in vinegar/lemon juice, season with salt and pepper, and serve warm.
