One of my favorite appetizers is chicken wings, and sitting high on my list are Garlic Parmesan Chicken Wings. I love them fried naked and tossed in a buttery sauce loaded with fresh garlic and Parmesan. There is just something about that combination of crispy chicken, garlic, butter, and cheese that is hard to resist.

Hello, garlic! I love garlic, and I honestly don't know many people who don't. These wings don't just have a little garlic flavor hiding somewhere in the background. There is garlic in the seasoning, fresh garlic in the buttery sauce, and garlic powder in the sauce too. Every bite is packed with it.
Then there is the texture. These wings are fried naked, which means there is no flour or breading getting between you and the chicken. The outside gets beautifully golden and crisp, while the buttery Garlic Parmesan sauce has something to cling to. That means you get more of that rich, garlicky Parmesan flavor in every bite.
And there is no confusion about what kind of wing you're eating. They have that crispy, Southern fried chicken wing quality, but they are also exactly the kind of naked party wings you want to pile onto a platter. What Makes These Garlic Parmesan Wings Different
There are tons of Garlic Parmesan Chicken Wing recipes out there, and for good reason. They are just plain good. But what makes my wings different starts before I even season them.
I like to let my wings sit in a simple salt-water brine first. For me, it is not just about helping the wings stay juicy. I want that seasoning to get beyond the surface and into the chicken. I also find that the brine takes away that strong chickeny taste and leaves the wings tasting cleaner and fresher. That little extra step is worth it to me.
Then comes the other thing that makes these wings different. I fry them naked.

Chicken Wing Parts
I use chicken wing parts, which means the flats and drumettes with the tips removed. You can buy them already cut, or buy whole wings and cut them yourself.
Garlic
And plenty of it! Garlic is doing double duty in this recipe. I use garlic powder to season the wings and again in the sauce, but the fresh garlic in the butter sauce brings a completely different kind of garlic flavor. You need both.
Parmesan Cheese
I'm using powdered Parmesan in my sauce, and I'll explain why below. It blends into the buttery sauce beautifully and gives you that salty, cheesy Parmesan flavor throughout the wings.
Butter
Butter is more than just a sauce base here. It brings richness and helps carry all that garlic and Parmesan flavor right onto the crispy wings.
Smoked Paprika
You don't need much, and that's the point. It adds a subtle smoky depth underneath the garlic, butter, and Parmesan without announcing itself as a smoky wing.
Black Pepper, Salt, Lemon Juice, and Oil
These finish out the recipe. The salt is used in the brine and seasoning, lemon juice adds a little brightness, and the oil is what gives us those beautifully golden, crispy naked wings.
Powdered Parmesan or Finely Grated?
I'm not usually a big fan of powdered Parmesan cheese, but for this recipe, it is perfect. When it is mixed into the warm butter sauce, it blends right in instead of leaving you with clumps of melted cheese. And because it stays incorporated as the sauce cools, you don't end up with little pieces of hardened cheese stuck to the wings.
There is also a flavor difference. Powdered Parmesan has a stronger, saltier Parmesan flavor, while finely grated Parmesan has a fresher, nuttier cheese flavor and gives the sauce a slightly different texture.
The Best of Both Worlds
If you prefer finely grated Parmesan, absolutely use it. I actually like the idea of using the powdered Parmesan as the base of the sauce and then finishing the wings with a light sprinkling of finely grated Parmesan. That way, you get the smooth, savory flavor of the powdered cheese throughout the sauce along with little hits of fresh Parmesan on the finished wings.
That's the beauty of cooking at home. You can make it your way.
Dana's Note: Don't throw those wing tips away! If you cut your own wings, tuck the tips into a freezer bag and freeze them. They're perfect for adding extra flavor and body to your next pot of homemade chicken broth.
How to Make Crispy Naked Chicken Wings
Grab your heavy-bottomed pot or deep fryer, and let's get to cooking. Here is how I bring everything together to create the ultimate crispy, garlic-packed wings.
1. Brine the Wings
Place the chicken wings in your salt-water brine and let them soak for 30 minutes to 1 hour. You don't need to leave them in there all day. This simple step gives the wings a little extra seasoning before they ever hit the frying oil.
- Drain and rinse the wings well when the brining time is up. Don't skip the rinse. Nobody wants a wing that starts out overly salty before we even get to the sauce.
2. Season the Wings
Season the rinsed wings with the garlic powder, salt, black pepper, and smoked paprika, then add the lemon juice and toss everything together.
A little reminder here: don't go crazy with the seasoning. These wings are going to be tossed in a flavorful Garlic Parmesan butter sauce, so you don't want to start with an overly salty wing. The goal is layers of flavor, not a salt bomb. Blah!
3. Let the Wings Rest
You can fry the wings right away, but I prefer to give them some time in the refrigerator. Cover them and let them rest for a few hours or overnight. This gives the seasoning more time to work its way into the wings.
4. Pat Them Very Dry
Before you fry the wings, take the time to pat them really dry with paper towels.
Trust me on this one. Water and hot frying oil are not friends. If you leave the wings wet, your oil is going to get angry and start to spatter and sputter. Dry wings mean less drama at the stove and a much more pleasant frying experience.
5. Make the Garlic Parmesan Butter Sauce
While the wings are frying, make the sauce. This is one place where you don't want to be in a hurry.
- Melt the butter over low heat. We're not trying to brown it or burn it. Although I have to admit, browned butter would give you that lovely nutty flavor. That's just not what I'm going for with these wings. I want the butter to stay rich and buttery so the garlic and Parmesan can shine.
- Add the fresh minced garlic and let it gently warm in the butter. Don't brown the garlic. We want to slowly cook it just enough to release all that wonderful garlic flavor without turning it bitter.
- Stir in the garlic powder, black pepper, smoked paprika, and cayenne if you're using it. Then add the Parmesan and stir until everything is blended into a rich, garlicky butter sauce.
6. Dip, Toss and Eat!
Once those wings are golden, crispy, and cooked through, get them into that sauce while they're hot.
Now it's time for the best part: dip, dip, dip!
Use tongs or a fork to handle the hot wings. I know you're going to want to grab one with your fingers, but don't burn yourself before you even get to taste them.

Naked Party Wings with Garlic-Parmesan Butter Sauce
Ingredients
For the Wings
- 1½-2 lb. chicken wings pieces
- 2-3 tbsp Salt for soaking
- 3-4 quart Water for soaking
- 1 teaspoon garlic powder
- ½ teaspoon salt
- ½ teaspoon black pepper
- ¼ teaspoon smoked paprika
- 2 teaspoons fresh lemon juice
- Oil for frying
Garlic-Parmesan Butter Sauce
- ½ cup 1 stick butter
- 4-5 cloves fresh garlic finely minced
- ½ cup powdered Parmesan or 1 cup finely grated or shredded Parmesan
- ½ teaspoon garlic powder
- ½ teaspoon black pepper
- ¼ teaspoon smoked paprika
- Cayenne pepper optional
Instructions
- Soak the wings. Place the chicken wings in a bowl and cover with water seasoned with salt. Let them soak, then drain well and rinse.
- Season. Pat the wings lightly dry, then season with the garlic powder, salt, black pepper, and smoked paprika. Add the lemon juice and toss well to coat.
- Refrigerate. Cover and refrigerate for several hours or overnight to allow the seasoning to penetrate the wings.
- Pat dry. Before frying, thoroughly pat the wings dry with paper towels. This is important because excess moisture can cause the hot oil to splatter.

- For powdered Parmesan: It blends directly into the butter and creates a thicker, more cohesive sauce with a saltier Parmesan flavor.
