Back then, you could walk into the grocery store and grab a 20-pound bag of potatoes without breaking the bank. Sometimes, skillet potatoes were a meal all on their own. Other times, they made the perfect breakfast side dish with eggs and bacon, or they sat next to a plate of fried fish and coleslaw for dinner. And OH, the best part? Besides the rich, buttery flavor, this dish comes together in a whip and will fill up your family’s belly for under $5!

What Are the Best Potatoes for Skillet Potatoes?

Not all potatoes are created equal when it comes to skillet frying. If you want crispy edges and a tender center, go for Yukon Gold or Russet potatoes. Yukon Golds bring a buttery flavor and hold their shape well, while Russets crisp up beautifully thanks to their high starch content. If you prefer a firmer bite, red potatoes are another great option. Whatever you choose, just be sure to slice them evenly so they cook at the same rate.
