I’m sharing two of my favorite cold-weather pancakes: spiced gingerbread pancakes with a simple molasses syrup, and rich, fluffy eggnog pancakes. Both are easy to make, comforting, and perfect for a weekend breakfast or a slow morning any time this winter.

- 1/8 teaspoon nutmeg
- 1/2 teaspoon cloves
Eggnog Pancakes
- 1 1/2 cups flour
- 3 tablespoons sugar
- 1/4 teaspoon salt
- 2 teaspoons baking powder
- 1/2 teaspoon nutmeg or to taste
- 1/2 teaspoon vanilla extract
- 1 egg
- 1 1/2 cups eggnog
- 3 tablespoons butter or oil
