There’s just something about the smell and taste of a buttery biscuit that feels like a guilty pleasure. The richness of the biscuit pairs so perfectly with just about anything, especially sausage and gravy.

I love using my butter biscuit recipe because it adds that extra layer of flavor that shortening or lard biscuits just can’t match. But that’s just how my taste buds roll. Three Components, One Perfect Breakfast

Let’s combine three amazing components into one dish , it’s a recipe for pure delight! Picture the creamy richness of white gravy, the comforting butteriness of biscuits, and the savory flavor of homemade sausage all mingling together. Doesn’t that just sound yummy? Let’s bring these flavors together for a breakfast that’s sure to hit the spot. Perfecting the Biscuit: Butter, Fluff, and Flavor

First, let’s talk about the biscuit. Personally, I’m all about those full butter biscuits ,  they’re just so indulgent! But hey, you can play around with the texture by switching up the fat you use. Butter adds a rich flavor, but because it contains water, it might not give you the fluffiest result. If you’re after that classic fluffiness, you could try using shortening or even lard, either on their own or mixed with butter. Start with the Sausage: Pork, Turkey, or Chicken – You Decide!

Let’s kick things off with the breakfast sausage. But hey, feel free to switch it up with turkey or chicken if that’s what you’ve got. In my video, I happened to have some lean ground pork on hand, so I added a bit of butter to keep it moist. However, if you’re making homemade sausage for this recipe, I recommend using a fattier ground pork. Otherwise, you’ll need to add extra fat to the gravy. The Gravy: Rich, Flavorful, and Easy to Make

Finally, let's talk about the gravy , because who doesn’t love a good gravy, right? It’s like the cherry on top of a delicious meal! We’re going to keep things simple by adding it right to the browned and crumbled sausage. No need for another pan here , we want to savor all that fat and flavor from the sausage. I prefer using a sturdy iron skillet or a heavier pan to avoid overbrowning, but use whatever you’ve got, just keep an eye on the heat.

Now, let’s talk flavor. The sausage is the star here, so whatever flavors it’s got, the gravy will follow suit ,  spicy, sagey, you name it! I tend to use a bit more flour for a thicker gravy, but feel free to adjust to your liking by either reducing the flour or adding more liquid. Remember, we all have our own preferences when it comes to gravy thickness. And don’t worry if it thickens up too much as it sits –, just add a bit more liquid when reheating. Easy peasy!

Spices: Simple, Subtle, and Full of Flavor

We don’t add a ton of spices to the gravy since we’re counting on the sausage for flavor. But if your sausage could use a little extra kick, check out my homemade sausage recipe and feel free to amp up the spices as you brown it. A handy trick is to cook a small piece of your ground sausage first to taste and adjust the flavors to your liking.

For the gravy, we keep it simple with just a touch of onion and a pinch of garlic powder , I’m all about keeping that garlic taste subtle. Now, let’s talk pepper. It’s totally up to you! Personally, I’m a fan of cracked black pepper for that bold flavor, but you can use white pepper for something more subtle or get creative with rainbow or multicolored peppercorns for a floral twist. But for this gravy, I think cracked black pepper is the way to go.

Liquids: Creamy, Flavorful, and Customizable

Now, let’s talk liquid ,and for that classic creamy texture, we’re going with milk, and lots of it! Ideally, room temperature whole milk works best. However, if you’re opting for ground turkey sausage or chicken, you might want to amp up the flavor by adding some chicken stock or using a combination of half milk and half chicken stock. Of course, all milk works just fine too. Just remember, using chicken stock can add a different dimension to the gravy's texture and taste, so adjust according to your preference for thickness and flavor intensity.

Ingredients

  • cup flour
  • 1 lb ground breakfast sausage
  • 3 tbs butter or sausage grease
  • 3 cups milk at room temperature
  • 3 tbs minced onions
  • pinch of garlic powder
  • 1/2 tsp salt or to taste
  • 1/2 tsp black pepper or to taste

Instructions

  • Directions
  • Step 1: In a cold pan crumble and brown breakfast sausage.
  • Step 2 : Toward the end of the browning add minced onion and cook until soft.
  • Step 3 : Add flour, salt and pepper and garlic powder to pan with browned sausage. Mix well, stir until flour is well coated with grease from sausage. If not enough sausage grease add butter.
  • Step 4 :Turn off heat and cool. Stir occassionally. Let sit for a few minutes.(takes away the flour taste)
  • Step 5 : Reheat on medium heat and add a Tablespoon of butter if no grease left in pan.
  • Step 6 : Add room temperature milk slowly while stirring until mixture is fully blending. Turn down to low for 5-10 minutes. Add more milk if needed until your desired consistency is reached.
  • Step 7 : Top biscuit with hot gravy.

Tips and Suggestions

  • Adjust the Consistency: If your gravy gets too thick, simply add more milk to thin it out to your liking. If it’s too runny, cook it a bit longer to reduce and thicken.

  • Make It Spicy: Want a little heat? Add a pinch of cayenne pepper or a dash of hot sauce to the gravy for a spicy kick that pairs perfectly with the savory sausage.

  • Experiment with Sausage: You can use turkey sausage or chicken sausage for a leaner option. Just keep in mind that leaner meats may require a bit more fat (butter or oil) to create that rich gravy texture.

  • Make It Ahead: You can prep the sausage and gravy in advance and store it in the fridge for up to 2 days. Reheat gently on the stove and add a splash of milk if it’s too thick.
